PAIRS WITH TASTY TURKEY CHILI

Ingredients:
2 red onion -- chopped thin
4 red bell pepper -- chopped thin and 2" long
6 garlic clove(s) -- crushed
60 oz(s) black beans -- drained, substitute other beans if you prefer
1/4 cup(s) olive oil
2 1/2 tbsp chili powder -- less if sensitive to spice
1/2 tsp cayenne pepper
1 cup(s) cilantro -- chopped
4 whole wheat tortillas -- or more for smaller burritos
4 oz(s) shredded cheddar -- shredded
1 cup(s) salsa
optional toppings -- see below directions
Directions
Prep Work: Cook beans in our crock pot if not using canned. Chop onion, bell peppers; store together. Peel garlic cloves, chop cilantro; store together. Grate cheese.
1. Preheat oven to 350 degrees.
2. Chop onion and bell pepper. Saute in oil for 5-7 minutes; onion should be transparent.
3. Crush garlic and add along with beans, olive oil, chili powder, cayenne pepper, and cilantro. Salt to taste. Store half of mixture in refrigerator (if using in 1-2 days) or freezer for later.
4. Divide bean mixture among tortillas, roll, and place burritos in oven safe dish. Spoon 1-2 Tbsp. salsa over each burrito, then sprinkle all with cheese if using it. Cover with lid or tinfoil and cook until cheese melts; approx. 10 minutes.
Optional Toppings: Can be topped with any combination of shredded lettuce or spinach, avocado, sour cream, olives, or everything at once.
