Ingredients:
1 1/2 cup(s) Almond flour
1 tsp salt
3/4 tsp baking soda
1 tbsp cinnamon
1 tsp ground cloves
1/2 tsp nutmeg
4 egg(s)
3/4 cup(s) canned pumpkin
1/3 cup(s) maple syrup
1 tsp vanilla extract
1/2 cup(s) raisins -- or chocolate chips, cranberries, etc.
Directions
1. Preheat oven to 350 degrees Spray muffin tin or fill with paper liners.
2. Combine all dry ingredients in mixing bowl, almond flour through nutmeg.
3. In another bowl, whisk eggs, pumpkin, maple syrup and vanilla.
4. Make a well in the center of dry ingredients and fill with the egg mixture. Stir just until combined, then gently fold in raisins.
5. Fill muffin tins to the top, then bake 22 to 24 minutes. A toothpick in the center should come out clean. Place pan on a wire rack to cool and then remove muffins.
