Will I ever stop trying? This is actually my favorite so far because of the omega 3 rich flax and walnuts along with absence of butter or oil. The texture is still moist and chewy without the extra fat- perfect! I really like using a 60% chocolate bar broken into chunks instead of little chocolate chips, but you decide.
Ingredients:
1/2 cup(s) flax seed -- ground to meal
1/2 cup(s) water
1/2 cup(s) honey
1/2 cup(s) brown sugar
2 cup(s) whole wheat pastry flour -- or GF mix
1 tsp baking soda
1 tsp salt
3 oz(s) dark chocolate -- chips or chunks
1 cup(s) walnuts -- chopped
Directions
1. Mix ground flax meal and water in small bowl and let sit for 5 min. Preheat oven to 350 degrees.
2. In mixing bowl combine flax meal and water “gel”, honey and sugar.
3. Sprinkle flour, baking soda and salt over top; combine. Mix in walnuts and drop by tablespoons onto cookie sheet.
4. Bake 12 min., or until center does not depress when lightly touched.
