Baked Spaghetti Squash

I like to bake things rather than microwave so that is the method described here. It couldn’t be any easier, and if you are going to use it as noodles, try combining it with some regular spaghetti to introduce it to any new squash eaters.

Ingredients:

1 spaghetti squash
brown sugar
cinnamon

Directions

1. Preheat oven to 400 degrees.  Pierce the squash all the way through the skin and flesh in 5-6 places all around it.

2.  Lay on baking sheet or dish and place in center of oven on a rack. Remove after 50 min.; skin should be more pale in color and slightly wrinkled looking.

3.  Place on cutting board and cut in half.  Scoop out seeds with a large spoon, and then scoop out the stringy “noodles” which is all the rest.

4.  Toss in olive oil or butter, salt and pepper.  Sprinkle with a little brown sugar and cinnamon.
