Broccoli or Cabbage Cole Slaw

Coleslaw uses shredded cabbage while the new broccoli slaw uses shreds of those often under appreciated stems of broccoli.  Look for it next to the bags of shredded cabbage in the produce department, and you can use the cabbage instead if preferred.  When time is short just throw together a 3 minute salad by stopping after step #2 and leaving off the optional toppings.

Ingredients:

10 oz(s) broccoli slaw -- or cole slaw
2 green onion -- diced fine
1 tbsp mayonnaise
2 tbsp plain yogurt
1 tbsp apple cider vinegar
2 tsp sugar
1 tsp sesame oil -- OPTIONAL
1 tbsp sesame seeds -- OPTIONAL
1/4 cup(s) chow mien noodles -- OPTIONAL

Directions

1.  Dump shredded broccoli and onion into a medium sized bowl.

2.  In a small bowl mix together mayonnaise, yogurt, vinegar, sugar, and sesame oil.  Pour over broccoli and toss.

3.  Roast sesame seeds and/or sunflower seeds in a dry skillet until golden brown.  Shake every 10 seconds to keep from burning.

4.  Top salad with roasted seeds and then salt & pepper to taste.  Add chow mien noodles and any of the following toppings you would like to try :

- shredded carrot
- shredded bell pepper
- raisins
- chopped apples
- sunflower seeds, roasted in skillet
