Burke’s Famous Gingerbread

Molasses gives gingerbread much of its distinctive taste and is a great supplier of iron and other minerals.  Topping the bread with sweetened yogurt makes it into breakfast, or adding something sweeter like vanilla ice cream or whipped cream makes it into a healthy dessert. 

Ingredients:

1 egg(s)
1 cup(s) blackstrap molasses
1/2 cup(s) turbinado sugar
1/4 cup(s) butter
1/2 cup(s) applesauce
1 cup(s) water -- hot tap water
2 1/2 cup(s) whole wheat pastry flour
1 tsp baking soda
2 tsp powdered ginger
2 tsp cinnamon

Directions

1.  Heat oven to 325 degrees.  Grease 11x7 or 9x9 pan.

2.  Beat first 6 ingredients in large mixer until thoroughly combined.  Sprinkle dry ingredients over top and mix just until combined.

3.  Pour into pan and bake 40-45 min., or until a toothpick inserted in the center comes out clean. Serve with a topping…suggestions below.

Toppings: 3/4 c. plain yogurt (sweetened with 3 Tbsp. powdered sugar, lemon zest and lemon juice), whipped cream, or vanilla ice cream.

Protein Booster Option:  Grind 1/2 c. quinoa grains in a small coffee grinder and use quinoa flour to replace 1/2 c. of the ww pastry flour.
