These little powerhouses pack in some extra omega 3 with flax meal and walnuts, protein with peanut butter, and whole wheat flour fiber. I replace most of the butter in other recipes with flax gel, but this one still uses apple sauce because of the peanut butter. At my house I consider them little protein bars, perfect for energetic people on the go.
Ingredients:
3 tbsp applesauce
5 tbsp Tbsp. of butter -- slightly softened
1 cup(s) sucanat -- or other sugar
1/2 cup(s) peanut butter
2 egg(s)
2 cup(s) whole wheat pastry flour
1/2 cup(s) flax seed -- grind to meal
1/2 tsp salt
1/2 tsp baking soda
1/2 cup(s) chocolate chips
1/2 cup(s) dried cranberries
1/2 cup(s) walnuts -- chopped
Directions
1. Preheat oven to 350 degrees.
2. In mixing bowl combine apple sauce, butter, sucanat and peanut butter. Add eggs and mix thoroughly.
3. Sprinkle all dry ingredients over the top of the mixture in bowl, then mix in just until blended.
4. Fold in chips, cranberries and walnuts with a large spoon.
5. Drop by heaping tablespoons onto cookie sheets and bake for 9 minutes, or until golden brown.
*Use a small coffee bean grinder to make flax meal right before using.
Variation: For Omega 3 Champions, omit the chocolate chips and cranberries. Press one half of shelled walnut on top of each cookie before baking.
