Citrus Steamed Vegetables

Steaming is a great way to preserve nutrients in your vegetables.  They are tasty with a little olive oil, lime juice and oregano for variety.

Ingredients:

2 cup(s) zucchini(s) -- sliced 1/2" thick
1 cup(s) broccoli -- florets and peeled stalk
1/2 cup(s) corn -- fresh or frozen
1 fresh tomato(es) -- medium, chopped
4 tsp lime juice -- or lemon
2 tsp olive oil
1-2 tsp oregano -- fresh minced, or 1/2 tsp. dry

Directions

1.  Put broccoli in steamer basket and steam 3 min. Then add other vegetables.  Take off before completely done as they will continue to cook because they are hot.

2.  While steaming, combine dressing ingredients.  Gently toss with vegetables after they have cooled. Salt and pepper to taste.

Vegetable Substitutions:  Use your favorites.  Start steaming with harder vegetables first, like carrots, onions, broccoli and asparagus, then add softer ones later like zucchini, tomatoes and corn.  Total about 4 c. vegetables.
