These bars have no flour but lots of seeds, nuts and coconut. They are good to fill you up for a few hours at least, and great for bringing to work or school, with no artificial, strange, or unrecognizable ingredients!
Ingredients:
2 cup(s) dried date pieces
1/2 cup(s) butter
1 egg(s)
1 egg yolk -- save white in freezer
2 tsp caramel flavoring -- sold at Walmart
1 cup(s) oats
1 cup(s) shredded coconut
1/3 cup(s) coconut sugar
1/2 salt
3 tbsp cocoa powder -- dark is best!
1 cup(s) sunflower seeds -- raw is best
1/2 cup(s) pumpkin seeds -- raw is best
1/2 cup(s) almonds -- roughly chopped (half )
Directions
1. Preheat oven to 350 degrees. Roughly chop dried dates if they are whole. Place in bowl along with butter and beat on medium to high for approx. a minute.
2. Add all other ingredients and combine well. Drop in rounded balls of desired size on baking sheet and flatten slightly with palm.
3. Bake 12-14 minutes. Let cool for 10 minutes before removing from pan with spatula. They will harden quite a bit more after they are completely cool, which makes them great for travel.
