Frosted Orange Cookies

I don’t know about you but donuts are my special weakness, and frosted cookies come in second place.  It’s really not much more effort than unfrosted, especially when you consider that the baking time is perfect for whipping some frosting together and it takes about 2 minutes to make.

Ingredients:

1/2 cup(s) sucanat -- or brown sugar
3 tbsp butter -- softened
3 tbsp applesauce
1 egg(s)
1/2 cup(s) buttermilk -- or regular milk plus 2 tsp. lemon juice
2 tbsp orange zest -- divided
1 1/3 cup(s) whole wheat pastry flour
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1 1/2 cup(s) powdered sugar
1 1/2 tbsp orange juice -- squeeze from zested orange if needed

Directions

1. Preheat oven to 350 degrees. Combine first four dry ingredients in bowl and set aside.

2. In mixing bowl beat sugar, butter, and apple sauce until smooth.  Add the egg and beat until the batter is light and fluffy.

3. Mix in the buttermilk and 1 Tbsp. zest, followed by the dry ingredients.

4. Place dough in rounded teaspoons on cookie sheet and bake for 10 minutes.  Do not brown the cookies.

5.    In a small bowl with fork mix powdered sugar, 1 Tbsp. zest, and juice to frost the cookies.  Place in refrigerator while waiting for cookies to cool.

6. Frost cooled cookies.
