Healthy Apple Muffins

These are great for healthy snacking or breakfast on the run.  Our bulk pancake mixes save time and make these moist, tender, and delicious muffins.  If you are putting together your first batch of GF Pancake Mix, don’t worry about finding different ingredients because they can be found at any health food grocery store.  (Find directions at the end for using regular flour and leavening.)

Ingredients:

1 banana(s) -- medium sized
3/4 cup(s) applesauce
1/4 cup(s) olive oil
1/2 cup(s) buttermilk -- or regular milk w/ 1 tsp. lemon juice
1 egg(s)
1/4 cup(s) turbinado sugar
2 1/2 cup(s) pancake mix
2 tsp cinnamon
1 cup(s) apple(s) -- chopped very small

Directions

1.  Preheat oven to 350 degrees.  Oil 16 muffin cups (one tray plus 4 on another).

2.  Mash banana with a fork in mixing bowl, then add applesauce, olive oil, milk, egg and turbinado sugar.  Mix all together.

3.  Sprinkle pancake mix over top, then mix all together just until combined.  Fold in apple pieces.

4.  Bake 20 min., turn muffins out of trays and cool before eating. 

Out of Pancake Mix?-  Replace with 2c. flour, 2 tsp. baking powder, 1 tsp. baking soda and 1/2 tsp. salt


*Best if eaten with real butter on top!
*Add 2 tsp. lemon zest for great flavor
* Sprinkle grated cheese on top while still warm
