Marinated Kale & Cheese Salad

OK, you could eat this much sooner than 8 hours, but I really like the kale to get soft without needing to cook it, and this seems to soften to my liking.  I simply marinated the greens in the same dressing used for the GREAT Raw Broccoli, and then added some fresh vegetables and grated cheddar cheese.  Use another green for half of the kale if desired.  This salad is a variation of the one shown in the picture, Super Kale and Greens Salad.

Ingredients:

2 tbsp apple cider vinegar
1 tbsp olive oil
1 tbsp sesame oil
1 tbsp honey
1 tbsp mayonnaise
1 bunch kale -- spine out, sliced 1/2" thick strips
5 radish(es) -- cut into small sticks
1 English cucumber -- cut into 1/4' disks, and then into sticks
2 green onion -- diced fine
1/2 cup(s) shredded cheddar cheese

Directions

1.  Whisk vinegar, oils, honey and mayonnaise in medium bowl. Add strips of kale, cover with cellophane and refrigerate.

2.  After 8 hours or longer (or whenever you are happy with the texture of the kale), add all other ingredients and toss. Salt and pepper to taste.
