Molasses Bread

Molasses is a medalist when it comes to supplying iron, but not everyone has developed a taste for it.  You have been warned…this bread tastes like molasses, and if you already like molasses you will love it guaranteed.  It can take the place of a wonderful healthy snack, a light breakfast, or dessert.

Ingredients:

3 cup(s) whole wheat pastry flour
1 cup(s) buttermilk
1 tsp baking soda
1 cup(s) walnuts -- chopped
3/4 cup(s) unsulfured blackstrapp molasses
1/4 cup(s) sucanat -- or brown sugar
1 cup(s) raisins -- optional

Directions

1. Heat oven to 350 degrees.
2. This is the easiest recipe ever.  Just put everything into your mixing bowl and blend until all is incorporated.
3. Oil the bottom of a loaf pan, pour in, and bake for 55-60 minutes. Do not overbake.
