Omega Chippers

Once again we bring you a delightful dessert sans butter and blessed with the elusive omega-3 fatty acids in the canola oil and walnuts.  Don’t feel like you have to broadcast what you are doing…just make them and quietly watch them get eaten, knowing that BETTER ingredients are going down.

Ingredients:

1/2 cup(s) canola oil -- or olive oil
1 cup(s) brown sugar -- reduce by 1/4 if desired
1/4 cup(s) applesauce
2 tsp vanilla extract
1 3/4 cup(s) whole wheat pastry flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup(s) walnuts -- ground if desired
3/4 cup(s) chocolate chips

Directions

1.  Preheat oven to 350 degrees.  Cream together the oil, sugar, applesauce and vanilla until smooth.

2.  Sprinkle all dry ingredients over top and blend in until combined.  Grind walnuts coarsely in coffee grinder or chop with knife; stir into batter with chocolate chips.

3.  Drop by rounded tablespoons (makes 12 large) or teaspoons (makes 24 regular sized), depending on the size of cookie desired; flatten slightly with palm of hand.

4.  Bake 15 minutes or until golden on the edges.
