You just won’t believe that this is actually pretty healthy because it is so creamy and sweet. Makes a beautiful presentation for a nice dessert, or a fun way to start the day.
Ingredients:
1 cup(s) cottage cheese
1 1/2 tbsp honey
3 cup(s) pineapple -- fresh or canned, diced
1/4 cup(s) shredded coconut -- skillet toasted
Directions
1. Place coconut in dry skillet and medium heat. Stir approx. every 30 seconds until golden brown on edges, approx. 3-5 min. Take pan off heat.
2. In blender combine cottage cheese and honey until smooth.
3. Layer glass cup with 1/4 c. pineapple, 2 Tbsp. cottage cheese mixture, 1/4 c. pineapple, cottage cheese again, and ending with the rest of the pineapple. Sprinkle with coconut.
