Power Balls

Need a quick energy boost?  These little treats hide well in a purse or backpack to be there when you really need a boost of energy from all monounsaturated fat and protein rich nuts, polyunsaturated rich flax meal and dried fruit.

Ingredients:

2 cup(s) brown rice puff cereal
1/2 cup(s) almonds -- coarsely chopped
1/4 cup(s) pumpkin seeds
4 tbsp flax seed -- ground fresh
1/2 cup(s) dried cherries -- or other dried fruit
3/4 cup(s) unsweetened shredded coconut
1 cup(s) peanut butter -- or another favorite nut butter
1/4 cup(s) honey

Directions

1.  Combine first 7 ingredients in bowl.

2.  Place peanut butter and honey in medium pot.  Warm on low until it “loosens” up, approx. 2 min. stirring often.  Add all other ingredients, A PINCH OF SALT,  and stir to combine.

3.  Form rounded tablespoon- sized balls with your hands, pressing ingredients together to form tight ball.  Lay on cookie sheet or other flat surface..

4.  Let them harden slightly as they sit, approx. 30 min., before stacking in an airtight storage container.
