More Protein Peanut Butter Cookies

You don’t have to tell everything you know! We’ve snuck in a protein “heavy hitter” here…quinoa flour.  Any health food grocery store will sell quinoa grains, and you can use a coffee bean grinder to make your flour right before baking to preserve the most nutrients.  You can do it!  1) Find quinoa, and 2) use your coffee bean grinder for something really healthy. Trying something new takes some effort, but the payoffs are worth it.

Ingredients:

1 1/2 cup(s) peanut butter
1 cup(s) sucanat -- or brown sugar
2 egg(s)
2 tsp vanilla extract
1/4 cup(s) water
1 cup(s) quinoa -- uncooked, rinsed and dried
1 1/2 cup(s) whole wheat pastry flour
1 tsp salt
1 tsp baking soda
1/2 cup(s) peanuts -- chopped or halves, optional
1/2 cup(s) chocolate chips -- optional

Directions

1.  Preheat oven to 350 degrees.

2.  Combine first 5 ingredients in mixing bowl.  Mix until smooth.

3.  Grind quinoa and add to mixing bowl.

4.  Sprinkle quinoa, salt and soda on top of peanut butter mixture and blend together. ( Batter will be thick.)  Mix in chocolate chips if using.

5.  Roll 1 Tbsp. of batter between palms and place on baking sheet.  Flatten with fork and press peanuts into top if using.

5.  Bake for 8-10 minutes until golden brown.
