Seedy Butter Cookies

Ben loved these a lot, which is why they are being added to the catalog. I guess the outstanding feature of them is the high amount of pumkin seeds and dates, no sugar, and lots of oats for the grain.  I soak and sprout the seeds to make the nutrients MUCH more bioavailable!!

Ingredients:

2 cup(s) dried date pieces
1/2 cup(s) butter
1 egg(s)
1 tbsp vanilla extract
1 cup(s) oat flour -- make in a blender!
1/2 cup(s) oats
1/2 cup(s) gluten free baking flour mix
1 tsp xanthan gum
3/4 tsp baking soda
3/4 tsp salt
3/4 cup(s) pumpkin seeds

Directions

1.  Preheat oven to 360 degrees.

2.  Mix dates through vanilla in a mixing bowl until well combined.

3.  Sprinkle all the rest of the ingredient on top of the mixture in the bowl, including the seeds. At this point other add ins could be added if desired, like some raisins for instance. It should already be sweet enough though, just take a little taste. Another option to make it sweeter if you like is a teaspoon or so of stevia powder.
