This is a great cabbage salad to have when you aren’t sure about how long it will have to sit out because it has no mayonnaise. It’s the ultimate in “keep it simple”, yet rich in cancer-fighting antioxidants.
Ingredients:
1/2 cabbage -- cut thin and 1" long pieces
1/4 red cabbage -- cut thin and 1" long pieces
3 green onion -- diced
1 carrots -- shredded
2 tbsp toasted sesame oil
2 tbsp apple cider vinegar
1 tsp sugar
3/4 tsp salt
Directions
1. Cut cabbage, onion and carrot according to directions above. Place in large serving bowl.
2. Whisk sesame oil, vinegar, salt and pepper together in small bowl until well combined.
3. Drizzle over salad and toss to coat. Let stand 10 minutes or so before serving for flavors to blend.
OPTIONAL ADDITIONS: crunchy Chinese noodles sprinkled over top and/or toasted sesame or sunflower seeds
