Teriyaki Ginger Salmon w/ Salad

How could something so perfect be so simple?  Remember the Bean Balance when you go to buy the salmon so that you will feel better about what you are paying.  And don’t forget that WILD CAUGHT salmon is on of nature’s best suppliers of heart healthy omega 3 oil. 

Ingredients:

20 oz(s) salmon
2 tbsp honey
2 tbsp soy sauce
2 tbsp fresh ginger -- diced very fine
2 tsp Dijon mustard
2 tsp hot sauce
1 lime
6 cup(s) baby spinach leaves
1/2 cup(s) red bell pepper -- cut 1" stick pieces

Directions

Prep Work:  Mix marinade ingredients: honey, soy sauce, ginger, mustard and hot sauce.  Cut bell pepper and spinach; store together.

1.  Preheat broiler to high. Mix marinade ingredients together; honey, soy sauce, ginger, mustard and hot sauce.  Add some zest from the lime. 

2. Place fish skin side down on greased broiler pan and drizzle half of marinade over top. Then broil 6” from heat 7-10 min.  Fish should flake easily with a fork when finished.  (Watch carefully during the last few minutes so as not to over cook.)

3.  Toss spinach and bell pepper with some of the remaining marinade. Slice lime to serve with fish.

ALTERNATE VEGETABLE: Steam some asparagus and toss with some of the marinade or some lime juice and butter.
