Ingredients:
1/2 cup(s) butter
2 banana(s) -- very ripe
1 egg(s)
1/2 cup(s) turbinado sugar -- or raw sugar
3/4 cup(s) dried date pieces -- or dice whole dried dates
1 tsp vanilla extract
1 1/4 cup(s) flour -- I use gluten free mixture with xanthum gum
3/4 cup(s) oat flour -- I grind oats in a coffee grinder
1/2 tsp salt
1 tsp baking soda
1 cup(s) dark chocolate -- chips or chopped
1 cup(s) walnuts -- or shelled sunflower seeds
1/2 cup(s) dried cranberries -- optional
Directions
1. Pre heat oven to 350 degrees. Blend together butter, banana, eggs, sugar, date pieces and vanilla until thoroughly combined.
2. Sprinkle flour, oat flour, salt and baking soda on top of butter mixture and blend in until combined. (Gluten free flour requires about 1/4 tsp. xanthum gum per cup of flour.)
3. Add chocolate, walnuts and cranberries. These amounts can be easily adjusted or changed based on personal preference!
4. Bake 12-14 minutes or until golden brown.
*Fig or coconut oil substitution: Replace banana with pureed fig. Replace olive oil with coconut oil.
* Gluten Free: Replace flour with gluten free mix plus 1/4 tsp. or xantum gum per cup of flour. Also use gluten free oats or just replace oats with more GF flour and xanthum gum.
* Replace walnuts with shelled sunflower seeds.
