I decided to end my search for the perfect chocolate chip cookie recipe, but I’ve temporarily “fallen off the wagon”. I’m not trying to be vegan, but I am experimenting with gluten free and healthier baking, both of which I found here. (Wheat flour would also work here as well.) It’s all a waste of time if they don’t taste good with great texture, and this was definitely NOT a waste of time.
Ingredients:
1/4 cup(s) banana(s) -- 1/4 c.= approx. 1/2 small banana
1 cup(s) peanut butter -- or replace 1/3 w/ yogurt!
1/2 cup(s) honey
1 cup(s) gluten free baking flour mix -- *see bottom for recipe
1/3 cup(s) oat flour -- grind rolled oats in coffee grinder
1/4 tsp salt
1/2 cup(s) chocolate chips -- semi-sweet
Directions
1. Blend banana, peanut butter and honey in mixing bowl. Preheat oven to 350 degrees.
2. Sprinkle flour, oats and salt over blended ingredients in bowl then mix just until thoroughly combined. Mix in chocolate chips and add more goodies if you have them and want to. I always add date pieces and lots of walnuts for more nutrition and protein for the kids.
3. Roll heaping tablespoons of batter with palms (ping pong ball sized) and flatten slightly with palm or fork on baking sheet. Bake 10 min. or until golden brown.
OPTIONAL ADDITIONS: walnuts, raisins
GLUTEN FREE FLOUR MIX:
1/2 garbanzo bean or brown rice flour
1/4 potato starch
1/4 tapioca flour
