Chocolate Chip Cookies ( no butter or sugar, olive oil, honey)

Time Required: 8 (20 min. total)

This recipe isn’t for everyone, but if you are desperate to get away from the usual saturated fat and cane sugar then you might give it a try.  Honey of course is still “sugar” but it isn’t from the sugar cane like turbinado and sucanat. 

Ingredients:

1 cup(s) olive oil -- also grapeseed or coconut oil
1 cup(s) honey
2 tsp vanilla extract
1 tsp baking soda
1 tsp salt
4 cup(s) whole wheat pastry flour -- or GF flour mix
1 1/2 cup(s) chocolate chips -- or replace part with dried fruit, nuts

Directions

1.  Preheat oven to 350 degrees.

2.  Place oil, honey,and vanilla in a mixing bowl and combine. 

3.  Sprinkle dry ingredients over top and mix until they are also combined.  Add chips, fruit, or nuts and mix in.

4. Drop rounded teaspoons on baking sheet and bake for approx.10 minutes.

TIme Saver: Instead of flour, salt, and baking soda, just use 4 c. Orange Tree Lane Pancake Mix.
