Cherries in Red Wine Sauce

I’ve eaten more cherries lately than a lifetime combined.  Here is a super simple way to eat them over ice cream or with fresh whipped cream on top.  The picture is a cherry orchard in Idaho…they taste even more amazing right off the tree! We picked so many that day that we came home and made this recipe to use some of them up, and the difference in taste was just another tantalizing treat for our taste buds. Ahhh, summer.

Ingredients:

1 lb(s) cherries -- cut in half and pitted
1 cup(s) red wine
1 lemon -- zested

Directions

1.  Place pitted cherries, wine and lemon zest in cooking pot and simmer 15 minutes.  Turn off heat, put lid on pot and let sit for 2 hours.

2.  Serve cherries and some of the liquid over ice cream or with some fresh whipped cream on top. 

*Don’t throw the extra liquid away! Use in a fruit shake, drink as is, or add some sparkling water and a little liquid stevia if needed for extra sweetness.
