Chocolate Chip Cookies (w/ chia, avocado and dates)

I just discovered the superfood chia seeds, and now am on a quest to find ways to use them. Of course, they had to go in a chocolate chip cookie! The avocado is a great substitute for butter, and the dates a great one for sugar.

Ingredients:

2 tbsp chia seeds
1/2 cup(s) butter
3/4 cup(s) brown sugar
1 cup(s) dates -- chopped
1/2 cup(s) avocado(es)
2 tbsp olive oil
1 tsp vanilla extract
1 1/2 cup(s) flour -- or GF
3/4 tsp baking soda
3/4 tsp salt
3/4 cup(s) chocolate chips -- or mix with raisins

Directions

1.  Combine chia seeds, butter, brown sugar, dates, avocado, olive oil and vanilla in mixing bowl and blend thoroughly.

2.  Sprinkle flour, baking soda and salt over top and blend together. Add chocolate chips and mix. Add one or two tablespoons of water if the batter seems too thick.

4.  Bake at 350 degrees for 13 minutes.  (Sometimes I make jumbo cookies with this batter and it will need a few more minutes of cooking because of their size.)
