Oatmeal Champions

Time Required: 10 (20 min. total)

If you’ve tried the Champions, you will find this very similar but with a different oatmeal cookie twist. This recipe makes 2 dozen, high protein and fiber, delicious peanut butter oatmeal cookies.

Ingredients:

3/4 cup(s) peanut butter
1/4 cup(s) butter
1 egg(s)
3/4 cup(s) brown sugar -- or sucanat
3/4 cup(s) honey
2 tsp vanilla extract
2 cup(s) rolled oats
1 cup(s) whole wheat pastry flour
2 tsp cinnamon
1 tsp baking soda
1 cup(s) raisins

Directions

1.  Preheat oven to 350 degrees.

2.  Blend peanut butter, butter, egg, sucanat, honey and vanilla in mixer bowl until well combined.

3.  Sprinkle dry ingredients including raisins over the top and then mix all together.

4.  Drop by rounded teaspoon on baking sheet and bake 9 minutes, or until light, golden brown.
