OTL Mashed Potates

In typical Orange Tree Lane style we want you to scrub the skins of your potatoes and leave them on to benefit from the fiber.  We’ve also eliminated some of the fat content so you can enjoy this delightful side dish more often without guilt. If you haven’t purchased nutritional yeast yet, get some at a health food grocery store and start benefiting from the extra megadose of B vitamins.  It has a slight buttery/nutty taste, so mashed potatoes are the perfect place to get some into your diet.

Ingredients:

6 russset potato(es) -- large size; or yukon
1/3 cup(s) cottage cheese
2/3 cup(s) buttermilk
5 tbsp nutritional yeast -- OPTIONAL
2 tbsp sour cream

Directions

1.  Cut potatoes into 1” chunks and boil in water until tender, approx. 15 min.

2.  Combine all other ingredients in blender.

3.  Drain potatoes reserving 1/2 c. water.  Mash in pot while still warm with potato masher.  Pour in sauce from blender, loosening with reserved potato water to get desired consistency.

4.  Add 1/4 tsp. each salt and pepper, then continue to add to taste.  Can be topped with chopped chives or green onion.

Comments:

I was surprised how good the potatoes were with such a small amount of sour cream.  I substituted half-n-half for buttermilk, which I wouldn’t recommend, I think it made it a little bland.
