Scrambled Eggs on Toast

Time Required: 5 (10 min. total)

Ingredients:

7 egg(s)
2 oz(s) cheddar cheese -- 1/2" chunks
garlic salt
1 green onion -- chopped
1 avocado(es) -- chunks
4 slice(s) bread slice -- or English muffins

Directions

1.  Heat a few Tbsp. of oil in a skillet on medium heat.  Meanwhile, crack eggs into a small bowl and whisk.  Put toast in toaster.

2.  Pour eggs into skillet.  Push them around a bit with a spatula and drop cheese chunks, onion, and a pinch of garlic salt on top.

3.  Turn eggs over a few times as they cook and add avocado before completely done.  Done when no longer shiny; watch carefully as it only takes a few minutes.

4.  Butter slices of toast and place eggs on top. 

Serve with fresh fruit in season.
