Chocolate Chip Cookies (vegan, apple sauce, banana, coconut oil)

Very ripe bananas and dates give these cookies almost all the sweetness they need, and heart healthy coconut oil takes the place of butter.  I substitute some of the chocolate with raisins and add lots of walnuts which also cuts down on the sugar. All I can say about how they taste is that with three teenagers in the house they are gone within a few hours.  I don’t tell them too much about what I’m doing, I just bake!

Ingredients:

1/4 cup(s) coconut oil
1/2 cup(s) applesauce
1 cup(s) dried date pieces -- or chopped fresh
1 1/2 very ripe bananas(s) -- freeze leftover for fruit shake
1 tsp vanilla extract
1/4 cup(s) brown sugar
1 3/4 cup(s) flour -- or GF flour mix
1 tsp salt
1 tsp baking soda
1/2 cup(s) chocolate chips
1/2 cup(s) walnuts

Directions

1.  Preheat oven to 350 degrees.

2.  In mixing bowl beat together coconut oil, apple sauce, date pieces, banana, vanilla and brown sugar until thoroughly combined. (Date pieces will still be lumpy.)

3.  Sprinkle dry ingredients over top: flour, salt, baking soda.  Mix in chocolate and nuts.

4.  Drop on cookies sheets and bake 12-14 min.
