PAIRS WITH YUMMY HAMBURGERS
Because of pairing power at work here you have only to scrape the seeds from the zucchini, add them to your Yummy Hamburger saved leftovers, stuff boats and top with cheeses, then bake away. Dinner will be done in minutes! If you didn’t make the hamburgers then see bottom for directions to making these alone. You will need to add a few ingredients to your shopping list in this case! Ingredients:
6 zucchini(s) -- medium to smaller size
1 1/2 cup(s) shredded cheddar
paired recipe leftovers -- hamburger mixture
Directions
Prep Work: Cut zucchini in half horizontally. Dice tomato. If not using leftovers from Yummy Hamburgers recipe, then mix hamburger with next 6 ingredients. Shred cheddar cheese if needed.
1. Preheat oven to 350 degrees. Cut zucchini horizontally and scrape out seeds. Save them for hamburger.
2. Add seeds and diced tomatoes to paired recipe leftovers. Without leftovers, combine meat, Worcestershire sauce, ketchup, salt, pepper, breadcrumbs, zucchini seeds and diced tomato in a bowl..
3. Lay zucchini in 13x9 pan, stuff center with meat mixture, and top with shredded cheese. Bake 15-20 min.
NOT PAIRED?: For yield of 6 take 1 lb. hamburger, 2 Tbsp. Worcestershire sauce, 2 Tbsp. ketchup, 1 cup bread crumbs, two finely diced tomatoes and 1/2 tsp. each salt and pepper. Mix together.
TOMATO ALTERNATIVE: Red bell pepper can be used to substitute for one or both tomatoes.
