Yummy Hamburgers- paired recipe

PAIRS WITH ZUCCHINI BOATS
Fiber rich grains give the burgers something of a meatloaf texture, while hidden mushrooms are fantastic suppliers of selenium and riboflavin, as well as good suppliers of three B vitamins. If you don’t want to make the paired recipe then simply freeze half of the meat to have hamburgers another night.  You may never have had a hamburger do you so much good!

Ingredients:

2 lb(s) ground beef -- preferably grass fed
8 oz(s) white button mushrooms -- chopped fine
1 1/2 cup(s) bread crumbs
1/2 cup(s) flax seed -- ground before using
4 tbsp Worcestershire sauce
4 tbsp bar-b-que sauce
1 tsp salt
1/2 tsp pepper
6 whole wheat hamburger buns
6 slice(s) provalone cheese
1 avocado(es) -- sliced
2 cup(s) chopped spinach
1 fresh tomato(es) -- sliced

Directions

Prep Work:  Chop mushrooms. Grind flax in small coffee bean grinder.  Defrost meat if needed. (Remember to use fresh hamburger if making extra to freeze.)  Combine meat with next 7 ingredients

1.  Preheat oven to 400 degrees.

2.  Combine all ingredients (except buns and garnishes listed afterward) in mixing bowl.  Set aside and refrigerate half for the zucchini boats tomorrow or freeze in hamburger patties for later.

3.  Grease roasting pan.  Shape meat into balls and flatten;  place on roasting pan.

4.  Roast 6 min., then turn burgers over and roast 6-7 min. more. 

5.  Place buns cut side down on baking sheet and put in oven after flipping the patties.  Begin checking after a few minutes and remove when toasted. 

6.  Build the hamburgers with mustard, mayo, ketchup, fresh tomatoes, avocado, provolone, spinach, etc.  To eliminate carbs with protein, substitute buns with large pieces of leafy green lettuce wrapped around patties.  Serve with fresh cut apple wedges for some fibrous, fresh crunch.
