PAIRS WITH PESTO CHICKEN
Double the chicken when you make Pesto Chicken and you will have a great head start here! (Not pairing see end.) So many enchiladas are swimming in cheese, but these save that just for the top and make good use of creamy, plain yogurt to give you that decadent texture and taste. Reduce the chilis for delicate pallets, or add some more for the hearty. The ingredient prep is easy, but I’ve included a short video to show the “put together” part just in case you haven’t done it for awhile, or ever.

Ingredients:

3 tbsp butter
1 cup(s) onion -- chopped fine
3 garlic clove(s) -- crushed
6 tbsp flour -- 1/4 c. = 4 Tbsp.
1 3/4 cup(s) broth
1 cup(s) plain yogurt -- whole or reduced fat
2 tbsp taco seasoning -- organic
6 whole wheat tortillas
3 cup(s) cooked chicken -- chopped 1/2" pieces
2 tomato(es) -- diced fine
3 oz(s) canned green chilis -- mix with tomatoes
1 green bell pepper -- diced fine
1 cup(s) shredded cheddar cheese

Directions

Prep Work:  WATCH VIDEO. Chop onion. Chop tomatoes and bell pepper; store together and mix in chili peppers.  Shred cheese. Chop chicken to 1/2” pieces or remove from bones of a cooked chicken and then chop.

1.  Preheat oven to 350 degrees. Melt butter in large skillet and cook onions for 2 min.  Add garlic, followed by flour; keep stirring with spatula to keep from burning until smooth, approx. 30 seconds.

2.  Add broth, yogurt and taco seasoning, stirring constantly until slightly thickened.  Remove from heat.

3.  Place 13x9 pan next to the skillet with the sauce. Place vegetables and chicken nearby too. Take a tortilla and dredge it in the sauce, then lay in bottom of 13x9 pan.  Take approx. 1/2 c. chicken and lay down center, followed by a generous Tbsp. each of tomatoes w/ chilis and bell pepper.

4.  Roll tortilla and push to the edge of 13x9 pan.  Repeat until all are done.  (Save any extra sauce in freezer and add to soup broth another time.) Sprinkle with cheese and bake 30 min.

5.  Serve with Lemon Butter Broccoli if desired.

UNPAIRED USE: All you need to do is get some cooked chicken.  Here are a few options:  1) buy a cooked chicken   2) Make one in your crock pot while you sleep 3) Bake some in the oven first, in which case just make the Pesto Chicken, or use the baking times for bone-in chicken at this recipe  4) Use canned

Comments:

I made these twice in one week! My family loved them! They prefer them over my old family recipe smile My son had an assignment to bring in his favorite recipe, and he took this recipe with him! Thanks for a tasty clean recipe for a classic mexican favorite!
