Artichoke Heart Dip

I didn’t know cottage cheese could be made to taste so good!  This is a refreshingly lower fat, yet still delicious artichoke dip which tastes great with fresh vegetables or bread chunks. It’s also a great sauce for the paired recipe Cod Fish Tacos.  Look for canned artichoke hearts with other canned vegetables, and onion powder with spices if you don’t already have it in your pantry.

Ingredients:

14 oz(s) artichoke hearts -- drained
1 cup(s) cottage cheese
1/2 tsp onion powder
2 green onion
2 tbsp mayonnaise
1/4 cup(s) parmesan cheese

Directions

1.  Put all ingredients into a blender and blend until smooth. Add just a few teaspoons of milk if needed to loosen things up.  Refrigerate before serving.

2.  To serve warm (my favorite and shown in photo), place in 350 degree oven for approx. 15 minutes, or until edges turn golden and slightly bubbly. This is very easy and economical to do when baking something else already for the meal!
