Asian Lettuce Wraps (w/ Appetizer Idea)

Time Required: 15 (15 min. total)

Only 15 minutes are needed to throw this delicious entree together, but I suggest taking the time to cook a whole chicken in your crock pot before you get started. Watch this video to see how easy it is, and you will love the amazing convenience and ease of this recipe.  Hoisin sauce can be found in the Asian food section of your grocery store.

Ingredients:

1 bunch butter lettuce -- or romaine
3 cup(s) cooked chicken -- 1/2" chunks
1/4 cup(s) red bell pepper -- diced fine
1 green onion -- cut length in half; dice fine
2 tbsp soy sauce -- or Bragg's Amino Acids
1 tbsp sesame oil
1 tsp fresh ginger -- minced w/ shredder
2 garlic clove(s) -- crushed
2 tbsp hoisin sauce -- plum sauce

Directions

Prep Work:  Prepare bell pepper, onion, garlic and ginger according to specifications above; store together.  Cook chicken in crock pot.  Take chicken off bone and cut into 1/2” chunks.

1.  Separate leaves from head at base, rinse and lay on clean dish towel to dry.

2.  Combine all ingredients except plum sauce in medium bowl and stir with a fork.  Pat leaves with a paper towel if still wet when ready to assemble wraps. 

3.  Hold one leaf in palm, then put 1/2 tsp. plum sauce on edge of small spoon and run it down spine of lettuce leaf.  Fill leaf with 1/3 c. chicken mixture and place on serving platter. Repeat.

4.  Serve with fresh cut vegetables like English cucumber, carrot sticks, radishes, jicama or snap peas…whatever you can find fresh at your market.  Choose an Orange Tree Lane dip like the bean spread in this recipe, or small bowl of favorite salad dressing to go along with them if desired.  Or throw together a Simple Cabbage Salad.

OPTIONAL ADDITIONS:  chopped water chestnuts and /or bamboo shoots in the same measurement as the bell pepper.

APPETIZER IDEA:  Steam or saute some shredded cabbage. Spread the hoisin in the center of a large egg roll wrap, then add a thin line of the above ingredients topped with some of the cabbage. Wrap one corner over ingredients in center, fold both sides in, then tightly roll to the other corner. Dip your finger in water and rub the edge of the wrap to make it stick closed.  Cook in coconut oil on in a skillet, turning to brown all sides. YUM!
