Black Bean Dip
Serves:
Time Required: 5 (5 min. total)

Ingredients:

4 garlic clove(s) -- crushed
15 oz(s) black beans -- rinsed and drained
2 tbsp tomato paste
2 tbsp olive oil
1 1/2 tbsp lime juice
1/2 tsp cumin
1/4 tsp salt
pinch ground red pepper -- pinch=1/8 tsp.

Directions

1.  Blend all ingredients in blender or food processor until smooth.

Tomato paste:  Freeze leftover paste from can in a small ziplock for use in soup or sauce.  Ketchup can be substituted but it makes the dip somewhat sweet.
