Chewy Protein Bar Cookies

This recipe makes 20 delicious protein bar cookies which capitalize on the butter-like consistency of flax meal and water gelled together. Granulated sugar and wheat flour also move aside for nutrient dense dates, almonds and oats with a little help from natural stevia powder. 4.6 grams of protein per cookie rev up a tired, post work out body, or supply energy when you are just on the run and need a healthy boost.

Ingredients:

1/2 cup(s) flax seed -- ground to meal
1 cup(s) almonds
1/2 cup(s) dates
1 cup(s) oats
3 tbsp butter
1/4 cup(s) sucanat -- or brown sugar
1 oz(s) stevia powder -- each packet = 1 oz.
1 egg(s) -- add an extra yolk for even better texture
1 cup(s) quinoa -- ground to powder in blender of coffee grinder
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/3 cup(s) chocolate chips
1/3 cup(s) dried cranberries

Directions

Directions:
1. Preheat oven to 350 degrees and grease a baking sheet. Pour flax meal into small bowl with an equal amount of water and let sit for 10 minutes to gel.
2. Place almonds, dates and oats in a food processor or blender to grind fine. Set aside.
3. In mixing bowl thoroughly combine butter, sugar and stevia. Add egg, and flax gel when it is finished sitting for 10 minutes.
4. Add almond and date mixture to mixing bowl along with ground quinoa, salt, cinnamon and nutmeg.
5. Add 1-2 tablespoons of water if needed; consistency should be that of traditional cookie batter.
6. Roll a generous tablespoon of dough between hands and place on greased sheet. Bake 12 minutes or until turning golden on edges and slightly firm to touch.
