Chewy Vegan Chocolate Chip
Time Required: 1 (25 min. total)
Ingredients:
3 cup(s) oat flour
2 cup(s) flour
2 cup(s) sugar
1/2 cup(s) flax seed -- grind into meal
1/2 cup(s) tapioca flour -- or potato starch
3 tsp xanthan gum
2 tsp baking soda
2 tsp salt
1 cup(s) applesauce
3 tbsp vanilla extract
1 3/4 cup(s) coconut oil -- softened
2 cup(s) dark chocolate -- chips or chunks
Directions
1. Preheat oven to 325 degrees.
2. Mix oat flour through salt in mixing bowl.
3. Stir in applesauce, vanilla, coconut oil until combined, then fold in chocolate.
4. Bake 14 minutes until golden brown, rotating tray half way. Let cool before removing from tray.
