Chocolate Flax No-Bake Cookies

Is this a cookie or a fiber bar?  Definitely a cookie, but with more fiber than you ever dreamed possible because of the oats and abundance of flax meal.

Ingredients:

4 tbsp butter
1 cup(s) sugar -- raw or sucanat
2 unsweetened chocolate squares -- 1 sq. = 1 oz.
1/2 cup(s) milk
3 cup(s) oats
1/2 cup(s) unsweetened shredded coconut
1/2 cup(s) walnuts -- chopped
1/2 cup(s) flax seed -- ground to meal
1/2 tsp salt

Directions

1.  Place butter, sugar, unsweetened chocolate and milk in medium sized saucepan.  Bring just to a gentle boil stirring every so often to combine all, then turn down to simmer until chocolate is melted.

2.  Add all other ingredients.  Drop by rounded teaspoons on a flat surface, press center with thumb to flatten and let cool in refrigerator until hardened, approx. 15 min. 

Want to cut the sugar?  Decrease sugar by 1/4 and add drops of stevia until sweetened to taste, approx. 20 drops for a single recipe.
