Date Nut Brownies
Serves:
Time Required: 20 (20 min. total)

Ingredients:

2 cup(s) raw almonds
2 cup(s) walnuts
1 1/2 cup(s) cocoa powder
5 cup(s) dates
1/4 tsp salt
1/4 cup(s) coconut milk
1 cup(s) dark chocolate -- I use 85% with a tsp. raw honey
2 tbsp chia seeds -- ground in coffee grinder
1/4 tsp salt
2 tbsp coconut oil

Directions

1. Blend the nuts and cocoa powder together in the food processor.  Dump into a large bowl.

2. Blend the dates in two different batches.  Dump into a separate bowl.

3. Return half of nuts to processor and at half of dates one chunk at a time through feeding tube.  Remove “ball” that forms inside and repeat with remaining ingredients.

4. Press nut/dat/cocoa mixture into waxed paper lined 13x9 pan, push down with flat palms to compress. Refrigerate.

Frosting:

5. Heat milk in microwave bowl 15 seconds, add all other ingredients and stir. Heat more if needed to melt completely. Spread on brownies and refrigerate longer until set, approx. 30 min.

Variations: -Add peppermint extract to frosting for wonderful taste.
            -Add 1/2 tsp. coffee grounds to brownie mixture before pressing into pan
            - Add a few tablespoons of flaked coconut or 1/2 c. of chopped nuts brownie mixture
