Diana’s- Chocolate Breakfast Cookies
Time Required: 15 (30 min. total)

These little bites are sweet enough to be a cookie, but healthy enough to be some healthy calories on your way out the door.  Also a great to keep in the car for before and after a workout.


1/2 cup(s) butter
1 avocado(es) -- large sized
1 egg(s)
2 tsp almond extract
2 tsp vanilla extract
1 cup(s) sprouted pumpkin seeds
1 cup(s) sprouted sunflower seeds
2 cup(s) dried date pieces
2 cup(s) shredded coconut
2 cup(s) oats -- GF
2 cup(s) gluten free baking flour mix
2 tbsp cocoa powder
2 tbsp cinnamon
1 1/2 cup(s) coconut sugar
1/2 tsp xanthan gum
1 tsp salt
1 cup(s) chocolate chips -- or raisins, or dark chocolate chunks


1.  Preheat oven to 350 degrees. Blend the butter, avocado, and extracts together well.

2.  Add all other ingredients and blend well. Drop by rounded balls onto baking sheet and flatten slightly.

3. Bake for 14 minutes.
