Chia Seed Fruit Jam

Yeah another way to use chia seeds, and this one saves money too! The lemon juice is not absolutely necessary, but I think it adds interest to the taste.

Ingredients:

3 cup(s) frozen blueberries or strawberries
1/4 cup(s) honey
1/4 cup(s) chia seeds
2 tsp lemon juice

Directions

1.  Place frozen fruit in a small saucepan with lid and cook on medium heat until fruit softens, approx. 5 mins.
2.  Add honey and chia seeds and continue to simmer until jam thickens. Stir ocassionally to keep bottom from burning. (It will coninue to thicken as it cools!)
3.  Refrigerate in a jar with lid. I use an empty spaghetti sauce jar.
