Green Tandoori Calzones

Time Required: 5 (20 min.-24 hrs. total)

These calzones take only minutes to assemble and bake if you have made the Green Tandoori Chicken Salad first and use the leftovers. If that is the case, skip to step #3 and you are 15 minutes away from being done.  Otherwise start from scratch with the chicken and after it has marinated, the assembly will again be very simple…and the taste wonderful!

Ingredients:

1/2 scallion(s)
1/2 garlic clove(s)
1/4 cup(s) parsley
3 tbsp lemon juice
3 tbsp olive oil
1/4 cup(s) plain yogurt
2 boneless skinless split chicken breasts
1 cup(s) jack cheese -- shredded, or another favorite kind
1 pizza dough/crust -- medium pizza

Directions

Prep Work:  Blend first 6 ingredients in a blender for marinade. Pierce chicken in 5-6 places, lay in baking dish and cover with marinade, turning to cover both sides.  Refrigerate up to 24 hrs.

1.  Blend first 6 ingredients in a blender for marinade. Reserve half of marinade for later. Pierce chicken in 5-6 places, lay in baking dish and cover with remaining marinade, turning to cover both sides.  Cover and refrigerate up to 24 hrs. 
2. Remove chicken from refrigerator.  Preheat oven to 400 degrees and bake 20-25 min.; do not over cook as chicken dries out easily. Check by making small slit and pulling meat apart to see if all pink color is gone and if juices run clear. (Thickest part should reach 165 degrees.)  Remove chicken from pan and let rest on a cutting board under foil tent for 10 min. before slicing. 

3.  Set oven heat at 350 degrees. Grease a baking sheet and set aside. Roll dough out into rectangle shape, and cut down the middle and transfer both pieces to a greased baking sheet. (Use a pre-made crust if you cannot find dough and make a pizza instead of folded calzone.)

4.  Spread saved marinade within 1/2” of edges, top with shredded cheese, some Parmesan cheese and chopped, leftover chicken on half of the dough piece. Fold each piece in half and pinch edges to seal.

5.  Bake at 350 degrees for 8-12 min.; finished when golden brown and firm to touch.  Slice to desired serving shape.  Serve with fresh vegetables and/or a salad.
