Picture meaty spaghetti sauce smothering steamed cauliflower with some parmesan on top…well here are the directions for getting there. Ground Turkey is listed here but can be easily changed to ground beef. A tasty and simple nutritious way to get the main dish and vegetables all in one!
Ingredients:
1 cauliflower -- large head, cut into small florets
1 onion -- small, chopped
ground turkey
4 garlic clove(s) -- crushed
1/2 tsp red pepper flakes
1/2 tsp sea salt
1/2 tsp pepper
1/3 cup(s) kalamata olives -- chopped
3 cup(s) jarred red sauce
1/2 cup(s) panko
1/2 cup(s) parmesan cheese -- grated
Directions
1. Cut cauliflower into florets and steam in steamer basket or pot with 1” water and the lid. Pour into 13x9 pan when done, do not leave in pot or steamer as it will continue to cook!
2. Meanwhile, add enough olive oile to large skillet to saute chopped onion. Add crushed garlic, after 4 mins., then turkey. Break meat into pieces with spatula and cook until no longer pink.
3. Stir inred pepper flakes, salt, pepper, olives and red sauce, heat and then pour over cauliflower in pan.
4. Sprinkle panko and half of cheese over top. Broil for a few minutes until browned, sprinkle with remaining cheese and serve.
