Raw Apple Pie

This “pie” has no sugar, butter or shortening, but lots of natural sweetness from dates, apples and an orange, as well as a powerful dose of the powerful antioxidant cinnamon.  It’s definitely vegan, meaning no animal products were used, and is so yummy that I made another one right away the next day.  We did bless ourselves with some non-vegan whipped cream and that was a real treat!  One fourth cup of dates is a full fruit serving with more potassium than bananas and lots of fiber too.

Ingredients:

2 cup(s) almonds -- raw unsalted
2 cup(s) dates -- seeded
1 tsp salt
1/2 cup(s) dates
1 orange -- peeled, and seeded unless you have a powerful blender
3 Granny Smith apple(s) -- peeled and sliced
2 tbsp cinnamon
1 cup(s) raisins -- OPTIONAL, or dried cranberries

Directions

1.  Blend dates and almonds in food processor or blender until finely chopped and press into a pie plate as a crust.

2.  Cut apples and toss with cinnamon in medium bowl.  Blend extra dates and orange in blender and toss with apples. (Add raisins here if using.)

3.  Pour apples into crust.  Pat down firmly and refrigerate to set if desired.  It tastes good right away but will firm up a bit if left in the refrigerator awhile.

4.  Cut and serve with optional whipped cream if desired.
