When you put this mix together, add some sweetness with coconut sugar or whatever your favorite sweetener is. Give it the taste test until it suits your fancy!
Ingredients:
20 dates -- pitted
6 tbsp coconut oil
4 tbsp cocoa powder
2 tsp beef collagen
1 tsp vanilla extract -- or 2 Tbsp. rum
1/2 tsp salt
1 tsp xanthan gum
1 cup(s) pumpkin seeds
1 cup(s) shredded coconut
1/2 cup(s) sesame seeds -- or replace both seeds with almonds
1/2 cup(s) sunflower seeds
6 tbsp oats
6 tbsp chia seeds
Directions
1. Add dates, coconut oil, cocoa powder, beef collagen, salt and xanthan gum to a food processor and process until smooth.
2. Push mixture to the sides and pour pumpkin seeds, coconut, sesame seeds and sunflower seeds in center and pulse until seeds are broken but still crunchy.
3. Add oats. Put dough in a bowl and mix all together with your hands if it is not completely finished in the the processor. If it is not sticking together, add a tablespoon more of coconut oil.
4. Line and 11x7 pan with parchment paper and press mixture firmly inside. Refrigerate approx. 30 minutes to harden.
5. Place chia seeds and/or cinnamon on a flat plate. Cut chilled dough into bars and roll them in the seeds/cinnamon. Store in an airtight container.
Alternatives:
-Replace sesame and sunflower seeds with almonds. Leave some almonds unprocessed and add them whole to the mix.
-Add dried cranberries.
