Here is another way to enjoy the sweet taste of summer hidden in nectarines with the buttery richness of fresh salmon. Its easy to prepare, and this along with the omega 3 oil in the fish makes it a winner for busy nights.
Ingredients:
24 oz(s) salmon
2 green onion -- diced white and green parts
1/3 cup(s) parsley -- diced
1 nectarine(s) -- diced
1 garlic clove(s) -- crushed
2 lemon -- cut in half
1 avocado(es) -- diced-OPTIONAL
Directions
Prep Work: Crush garlic,then dice onions, parsley and nectarine(s). Store together.
1. Turn oven broiler on high setting and place top rack approx. 8 inches from heat. Grease broiling pan with oil.
2. Place salmon skin side down on broiling pan and sprinkle with salt, pepper and olive oil. Cover with onion, parsley, nectarine and garlic.
3. Squeeze lemon and a little more olive oil over all and place under broiler. Broil approx. 10 min., or until fish flakes easily with a fork. (Stir toppings with a fork once or twice to keep from burning on edges.)
4. Remove pan from oven and drizzle either more lemon juice or a few teaspoons of melted butter over fillets for extra favor. If adding avocado, sprinkle over top of fillets now. Place tip of spatula between the fish and its skin. Lift fillets away from skin to serve.
