Sesame Greens

Time Required: 10 (15 total)

Apparently Korean cuisine has a tradition of richly spiced vegetables called namul.  It is our good fortune that this particular namul is easy to make and packed with nutrition and flavor, the perfect side dish.

Ingredients:

1 bunch spinach
1 bunch kale
1 tbsp sesame seeds -- roasted
2 tsp soy sauce
2 tsp sesame oil
1 garlic clove(s) -- crushed

Directions

1.  Wash and prepare greens for cooking.  Place kale topped by spinach in cooking pot with 1/4 c. water. 

2.  Bring water to boil and cook greens until soft; approx. 3-4 min.

3.  Meanwhile, with fork or whisk combine toasted sesame seeds, soy sauce, sesame oil, and garlic in serving bowl.

4.  Pour greens into colander, let cool, then gently squeeze out extra water.  Add to serving bowl and toss.

  *  Add another teaspoon of oil if it is a little dry. (Good time to use flax oil.)  Sprinkle with extra sesame seeds if desired.
