Spaghetti Squash Pancakes
Serves:
Time Required: 10 (10 mins. total)

This is perfect for leftovers, or l buy two at Costco like I did and create lots of leftovers for dishes like this. You can NEVER eat too much squash!!

Ingredients:

2 cup(s) spaghetti squash -- baked
4 egg(s)
1/4 cup(s) sugar
2 tbsp butter
1 cup(s) flour
1/2 tsp salt
1 tbsp baking powder
1 green apple -- peeled and diced
maple syrup

Directions

1) Combine cooked squash, eggs, sugar and softened butter in a mixing bowl. Mix well.

2) Sprinkle four, salt and baking powder over top and mix just until combined.

3) Fold in apple pieces. 

4) Heat butter in a skillet on med/high, drop batter into pan and flip after bubbles cover the surface of the pancake, approx. 2 minutes each side.

5)  Serve with butter and maple syrup.

*You can add spices like cinnamon, nutmeg, or allspice.  All go well with these pancakes.
