Spanish Rice

Time Required: 10 (35-45 min. total)

Look for a long grained brown rice for this delightful and simple whole grain accompaniment to any Mexican themed entree. Place some refried beans in an oven safe dish, sprinkle with cheddar cheese and serve them all together for a true “south of the border” dining experience.

Ingredients:

3 tbsp olive oil
1 cup(s) whole grain rice
1/2 cup(s) onion -- chopped
1 tsp garlic salt
1/2 tsp cumin
1/2 cup(s) crushed tomatoes
2 cup(s) chicken broth
1/3 cup(s) cilantro -- diced

Directions

1.  Heat oil in skillet but do not let smoke.  Add rice, garlic salt and cumin; stir fry until golden colored, approx. 4-7 min.

2.  Add onions, tomatoes and broth.  Bring to a boil, then cover and reduce heat to simmer for 25-35 min., or until rice is tender. Sprinkle cilantro before serving.
