Paired Sweetheart Chicken

Time Required: 20 (50 min. total)

We’ve paired this “somewhat spicy” chicken with low fat creamy mashed potatoes to balance it out.  *SAVE TIME by making extra chicken here to top the Angel Hair and Cherry Bows. Add more chipotle chili if you like it really hot, and *throw some large broccoli florets in with the potatoes when they are close to being done to round the meal out nicely.  *Use baking directions at end if you want to go for a walk while it cooks.  Watch the video for easier preparation!

Ingredients:

1/4 cup(s) lime juice
1/4 cup(s) soy sauce -- or Bragg's Amino Acids for GF
2 tbsp honey
2 tbsp chipotle chili in adobo sauce -- more if you like it hot!
8 chicken thighs with bone -- boneless is fine too if baking-see end.
3 russset potato(es) -- medium-large sized, or yukon; chunked
1/3 cup(s) cottage cheese
2/3 cup(s) milk
2 tbsp sour cream
2 tbsp nutritional yeast -- OPTIONAL

Directions

Prep Work:  Blend first 4 ingredients together in blender and marinate chicken; see step #2 for directions.  Scrub and chop potatoes into large chunks.  Make vinaigrette if desired.

1.  Preheat oven to 400 degrees to broil chicken.  Blend first four ingredients in blender to make marinade if not done ahead of time.

2.  Run finger under skin of chicken to loosen, but leave attached to cover meat.  Spread marinade under skin of each piece (reserving extra) and let them sit for at least 15 min. to marinate if possible, but not necessary.

3.  TO BROIL chicken, grease broiler pan and arrange chicken pieces evenly. Brush skin with some of the unused marinade and broil on low 15 min. Then brush chicken again with saved marinade and cook 10 min. longer. Repeat brushing with marinade and cook 10 more min. more for a total of 35 min.,  or until thermometer in thickest part reads 165 degrees.  (Breasts will take longer.)

4.  Cover potatoes in medium pot with water and bring to boil with lid on.  Remove lid when boiling, reduce heat to low boil and cook until potatoes are tender, approx. 15 min.

5.  Blend cottage cheese, milk, sour cream and yeast (if using).  Set aside for potatoes when done.
 
6.  Drain potatoes and mash with potato masher or large fork.  Add cottage cheese mixture and loosen with reserved water as needed.

*BROCCOLI:  cut stalks into large florets with part of stem remaining and drop into water with potatoes in the last 5-7 min. of cooking. Remove when they can be pierced with a fork.  Season to taste.

*TIME SAVER-  Double the amount of marinade you blend for this recipe and use it to marinate some chicken breasts for Angel Hair and Cherry Bows with Chicken recipe Cook at the same time in another baking dish and save for the pasta.

*TO BAKE CHICKEN- Consider using boneless thighs so meat can be sliced easily when done. Place chicken in baking dish to marinate with all of marinade and cover with foil. When ready, preheat oven to 350 degrees and bake for 50 min. or until thickest part of meat is 165 degrees. If thighs are boneless, chop in 1/2” pieces agains the the grain.
